The process never turns. Avery dissolves into alcohol and paranoia. Toschi is dissolved out of his career. The prima materia never refines because there is no philosopher's stone at the bottom of this vessel, only more black.
Graysmith's book, the film's only artifact of completion, is a false gold. He assembles a coherent narrative, publishes his conclusion, achieves the shape of resolution. But Fincher frames it precisely as a shape, a story the seeker built to survive the absence of the real answer, not the answer itself.
